iOS Dev Launchpad by @seanallen_dev is a great, free quick start course. I like Sean's teaching method, which fits my brain the best. Check out if it works for you as well.
Books to read:
If you are into books, SwiftUI Picture Book by @BigMtnStudio is an amazing reference resource to keep around when you are learning iOS development or working on a project.
Sure those authors have paid products as well, and recommend buying them if you can afford them.
