Let's start with THE MATH:
• 100 customers/day with an ave. spend of $7.5 = $750 in sales.
• 100 customers/day with an ave. spend of $13 = $1300 in sales.
(73% increase without any extra customers).
So the secret to boosting sales is increasing AVERAGE SPEND!

1. CROSS-SELL with EVERY order.
• Despite having a pastry cabinet full of delicious treats, most coffee shop staff allow customers to order a coffee without EVER recommending another purchase (like their most-popular pastry).
• Recommending a crowd-favourite keeps it genuine.

2. Add BUNDLES & COMBOS to the menu.
• Most cafes are packed full of epic sweet & savoury items yet NEVER use them to create bundles & combos to purchase on their menu.
• Sell croissants? Add a work-place bundle that contains 4 coffees + 4 croissants (at a slight discount).

3. Suggest an ETHICAL UPSELL wherever possible.
• If you have a combo for 2 coffees + 2 sandwiches (where the customer saves a few dollars) make sure you train your staff to ASK EVERY CUSTOMER who orders 2 coffees + 1 sandwich if they want to upgrade to the better value deal.

When I share these tactics some people always say:
"But I don't want to be too sales-y".
But if you BELIEVE in your products (and their quality) then selling MORE of them to each customer is the kindest thing you can do, as that's how they experience the maximum benefit.
