One of the meals I used to miss the most this time of year was my mom's pasta bolognese, until I found the perfect veggie meat replacement for her recipe. Here's the best plant based pasta sauce recipe, using textured soy, for an ideal comfort food this winter.
Beginning this preparation, grating 4 carrots and chopping 4 onions into small pieces. Proceed to saute these together in a pan over medium heat with a drizzle of olive oil until the onions are translucent. Add 2 cups of dry textured soy and cook for a couple of minutes, stirring once in a while.
Once that's ready, set aside and grab a large pot. Over medium heat add the stir fried soy mixture and add it to the pot, along with 2 cups of dry textured soy. Cook for a couple of minutes, stirring once in a while. Once the soy looks a bit darker, lower the heat, add a generous amount of salt (to taste) along with two cans of crushed tomatoes and a bay leaf. Cover the pot and cook on low for 25 minutes.
Proceed to prepare your favorite type of pasta. I recommend using protein pasta since it's delicious and much better for your health (Banza is my current favorite brand). Follow the instructions on the box and once it is ready, mix the desired amount of sauce into it. Plate the pasta and enjoy along with some parmesan cheese, or sub with nutritional yeast if vegan, and a hot piece of garlic bread.
