  • Lower in fat and saturated fat than other cheeses

  • Vitamin K2 - for bone building and healing

How to make cottage cheese pancakes

They are surprisingly tasty and easy to make. The trick is to blend the cottage cheese to get rid of the lumps and reveal a smooth pancake batter.

Ingredients

To make 8 pancakes you will need:

4 eggs, 400g cottage cheese, 56g of rapeseed oil (or any other plain oil), 1 tbsp baking powder and, 125g self-raising flour.

For a sweet pancake, you can add some vanilla essence or sugar to your taste.

Method

In a bowl, put the wet ingredients, then add the dry. Mix until combined.

Heat a pan to medium heat. Add 2 heaped tablespoons of mixture and spread into a pancake shape. Fry on medium heat. Only turn when it's crispy.

Serve with yogurt and fresh fruit, or it's delicious with scrambled eggs and a little maple syrup.
